Method

  1. Work the salted water into the flour, knead 8 minutes to a firm smooth dough, and rest it covered 30 minutes. 8 min
  2. Char the tomatoes, chillies and garlic in a dry pan until blistered and collapsing, then blend with the toasted sesame, lime juice and salt to a loose, nutty achar.
  3. Mix meat, onion, garlic-ginger paste, coriander, cumin, timur, salt and mustard oil, working it 2 minutes until it turns pale and sticky and clings to the bowl. Fry a teaspoon to check the salt. 2 min
  4. Roll 10g pieces into 9cm rounds with a thick centre. Fill with 20g and either pleat all the way round into a closed purse or fold to a half moon and crimp the arc.
  5. Steam in an oiled basket, none touching, for 10 to 12 minutes over a hard boil, until the skins go shiny and the filling reads 74C (165F). Serve with the achar. 12 min

How to tell it is going right

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

Pleating dumplings 8 recipes

  • The seam is closed along its whole length with no gap at either end of the pleat run: hold one up to the light and no filling shows through the join. A dumpling that opens in the water was sealed against a wet or floured rim.
  • The rim is clean and dry where it meets itself. Filling smeared onto the sealing edge is the single most common cause of a burst, and it cannot be wiped off once the dough has taken it up.
  • The pleats are even in size and count across the batch, so every piece holds the same weight of filling and cooks in the same time. A tray that ranges from eight folds to eighteen will not finish together.
  • The wrapper is thicker at the centre than at the rim, so the base carries the filling without tearing while the pleated edge stays fine enough to eat. A disc rolled evenly flat splits at the bottom.
  • It stands up on its own base without slumping, and the pleats still read as pleats after cooking rather than having relaxed into a smooth seam.

Where it goes wrong The rim was wet, floured or smeared with filling, so the seal never took: the dumpling opens in the pot, the filling leaves, and what surfaces is a slack empty wrapper in cloudy water. Uneven pleat counts across a tray compound it, because the batch stops finishing at the same moment.

  • The shell goes into the oven cold and the oven is fully up to heat, so the structure sets before the fat has time to melt out of it.
  • Lined and weighted right into the corners rather than heaped in the middle, so the sides are held against the tin as the fat softens.
  • Docked where it is not meant to puff, and the base stays flat rather than lifting into a dome under its own steam.
  • The weights come out and the base gets dry heat of its own before anything wet arrives. Pale and damp is not baked, and a filling will not finish it.
  • The edges are set and coloured and the shell releases from the tin rather than gripping it.

Where it goes wrong It went in warm, or the weights only filled the middle. The sides slump down the tin before the pastry sets, so the case is shallower than it should be, the filling overflows it, and the base is still raw underneath: the soggy bottom, arrived at three ways at once.
