  • 250 g puna yam, peeled and cubed
  • 3 ehuru seeds, toasted and ground

  • 8 g utazi leaves, shredded very fine
  • 2 scotch bonnet, blended
  • 100 g onion, blended
  • 40 g crayfish, ground
  • 1 tsp ogiri okpei
  • 1 seasoning cube

Method

  1. Rinse the catfish in very hot salted water, rubbing each steak until the skin squeaks and no slime is left, then drain.
  2. Boil the yam in a little water until it collapses under a fork, and pound or blend it to a stiff smooth paste.
  3. Simmer the blended onion, scotch bonnet, crayfish, ogiri and seasoning in the water for five minutes to build the broth.
  4. Drop the yam paste in teaspoon pellets so each one dissolves on its own, stirring until the broth thickens to the weight of pouring cream.
  5. Lay the catfish in and swirl the pot rather than stirring so the steaks stay whole, then add the ehuru, uziza seed, uziza leaf and utazi in the last five minutes.

How to tell it is going right

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • A single layer on dry metal with nothing added: no fat, and nothing else sharing the pan or the tray and competing for the heat.
  • It is kept moving: shaken, stirred, or turned. Anything left still scorches on the face touching the metal while the rest of it is barely warm.
  • It is judged by smell before sight: once it is fragrant there are seconds left, not minutes, and the nose reaches that point well before the colour does.
  • It leaves the pan the instant it is done, onto a cold surface. A hot pan keeps toasting whatever stays in it, and carryover here is the difference between done and ruined.
  • The colour is even and light rather than patchy, with nothing black at the edges: one scorched piece taints the whole quantity it is ground into.

Where it goes wrong It was left alone for a moment while something else was attended to. Dry heat has no margin: the pieces against the metal go from fragrant to acrid inside a minute, and the bitterness cannot be picked back out of a ground mixture.

  • The water was salted before anything went in, and tasting it confirms it: seasoned on the tongue, with the salt dissolved rather than sitting on the pot floor.
  • There is enough water, hot enough, that the pot returns to its boil quickly after the food goes in and never stops moving.
  • Where the dish uses the float as its signal, the signal is obeyed: the pieces rise and they come out then, not several minutes later once something else was finished.
  • Nothing is stuck to the bottom of the pot or welded to itself, and the water has not thickened into a cloudy sludge.
  • Drained on a bite rather than on the clock: resistance at the centre, with no chalky raw core.

Where it goes wrong The pot was too small and the water unsalted, so it never recovered its boil: the food sat in slack water, went gummy at the surface, and comes out bland in a way that no sauce afterwards can fix.
