  • 200g sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • For the batter: 115g butter, 190g flour, 200g sugar, 2 tsp baking powder, 1/4 tsp salt, 240ml milk

Method

  1. Toss the blackberries with the sugar, cornstarch, and lemon and let them stand 15 min. 15 min
  2. Melt the butter in a baking dish in the oven as it heats to 190C.
  3. Whisk the flour, sugar, baking powder, salt, and milk into a batter and pour it over the melted butter: do not stir.
  4. Spoon the berries and juice over the batter; do not stir.
  5. Bake 45-55 min until the cake has risen around the fruit and browned deeply. 55 min
