Ozark Skillet Cornbread

  • 250g yellow cornmeal
  • 60g flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 400ml buttermilk
  • 4 tbsp bacon fat or butter

Method

  1. Put the bacon fat in a cast-iron skillet and heat it in a 220C oven until smoking.
  2. Whisk the cornmeal, flour, baking powder, soda, and salt.
  3. Beat in the eggs and buttermilk quickly to a loose batter.
  4. Pour the batter into the screaming-hot fat, it should sizzle hard, and return to the oven.
  5. Bake 20-25 min until the top is gold and the edges are crisp. Turn out and serve hot with butter. 25 min
