Ingredients
- 400 g plain flour
- 200 ml warm water
- 6 g salt for the dough
- 700 g pumpkin or winter squash, peeled and cut into 5 mm dice by hand
- 300 g onions, finely diced
- 80 g cold butter, in small cubes
- 2 tsp cumin seed, crushed
- 1 tsp coarse black pepper
- 10 g salt for the filling
- oil for the steamer trays and 30 g melted butter to finish

Method
- Knead flour, salt and water to a firm dough, wrap it and rest 40 minutes, until it rolls out without pulling back on itself. 40 min
- Dice the pumpkin small by hand and mix with the onion, cumin and pepper, but hold the salt back until you are ready to fill.
- Roll the dough to 1.5 mm and cut 12 cm squares; salt the filling, then put a heaped spoonful and a cube of cold butter on each square, bring the four corners to the centre and pinch the seams shut, then join the two opposite ears underneath.
- Oil the steamer trays well and set the parcels a finger apart, then steam over hard boiling water 40 minutes, until the wrappers are translucent and drum tight and no floury bloom is left on top. 40 min
- Lift them off with an oiled spatula, brush with melted butter and serve at once with cold suzma.

- Nothing pooled: no wash run down into the seams, collected in the corners, or welded to the tray around the base.

- Baked, the finish is even and glossy across the whole piece and deep gold rather than patchy, with no darker bands where the wash sat heavy.

Where it goes wrong The wash went on heavy and ran into the scores and down to the tray, so the piece baked sealed along its seams, browned unevenly, and carries dark rubbery ridges where the egg collected.

- The surface has gone satin and barely tacky, releasing cleanly from hands and board instead of leaving a trail.

- Torn or cut open, the inside is uniform: no dry streaks, no unmixed pockets, no core of flour that never met the water.
- After its rest it rolls and shapes without snapping back. A dough that fights the pin needed more rest, not more force.
Where it goes wrong Sticking was fought with flour instead of technique or patience, stroke after stroke, until the dough had taken in far more than the formula asked; it turns tight and dry under the hands, and bakes dense however well everything else goes.
