- 250g walnuts or pistachios, ground with cinnamon
- 200g melted butter
- Syrup: 200g sugar, 150ml water, honey, lemon, made FIRST and cooled

Method
- Butter 2 sheets, scatter nuts, roll around a dowel or loosely by hand; scrunch into the pan.
- Repeat until the pan is full; butter the tops; slice now, not later.
- Bake 170°C, 40 min, to deep gold. 40 min
- Pour COLD syrup over HOT pastry: listen to it crackle.
