  • 1 pack phyllo, thawed properly
  • 250g walnuts or pistachios, ground with cinnamon
  • 200g melted butter
  • Syrup: 200g sugar, 150ml water, honey, lemon, made FIRST and cooled

Method

  1. Butter 2 sheets, scatter nuts, roll around a dowel or loosely by hand; scrunch into the pan.
  2. Repeat until the pan is full; butter the tops; slice now, not later.
  3. Bake 170°C, 40 min, to deep gold. 40 min
  4. Pour COLD syrup over HOT pastry: listen to it crackle.
