  • 500 g lingonberries, fresh or thawed from frozen
  • 225 g caster sugar

Method

  1. Pick the berries over for leaves, stalks and any that have gone soft, then drain them thoroughly and tip them out on a cloth until the surfaces look matt rather than wet.
  2. Put them in a scalded bowl with the sugar and stir with a wooden spoon, deliberately crushing about a fifth of the berries against the side to start the juice.
  3. Come back and stir every ten minutes until no sugar grates against the bowl and the syrup falls off the spoon in a slow rope rather than in drops.
  4. Pack into sterilised jars, press out any air pockets, cap and refrigerate.
