Method

  1. Split thick stems; keep leaves whole.
  2. Blast garlic in hot oil 10 seconds.
  3. Greens in, tossing violently; fish sauce and sugar around the rim.
  4. 90 seconds total. Out before it weeps.

How it should come out

  • Leaves are dark and glossy green with none gone olive or grey, and the split stems have kept their pale jade colour.
  • Stems snap under the tooth and the leaves are tender in the same mouthful: no raw crunch at the thick ends, no collapse in the leaves.
  • The bowl is nearly dry, under a tablespoon of liquid after standing a minute, and the greens are coated in oil rather than sitting in a puddle.
  • The smashed cloves have gone gold and soft through, sweet rather than raw-sharp, with none scorched black or bitter, and one turns up in most mouthfuls.
  • No raw fish-sauce smell comes off the bowl: it reads as savoury salt rather than as fish, and no sweetness is identifiable as sugar.

Where it goes wrong The greens go in still wet from the wash, the water crashes the wok temperature, and the bunch simmers in its own steam: limp olive leaves in a grey puddle, tasting faintly metallic.
