- 400 g beetroot, boiled, peeled and diced 8 mm
- 300 g waxy potatoes, boiled, peeled and diced 8 mm
- 150 g salted herring fillets
- 2 pickled cucumbers, diced 8 mm
- 1 tart apple, peeled and diced 8 mm
- half a small red onion, finely diced
- 3 eggs, hard boiled
- 250 g sour cream
- 15 g strong mustard
- 1 tbsp cider vinegar
- 1 tsp sugar

Method
- Soak the herring in cold milk or water for 2 hours if it is heavily salted, then drain, dry and dice it; taste a piece first, it should read savoury rather than harsh. 120 min
- Cook the beetroot and potatoes separately and cool them completely, because warm potato drinks the dressing and turns pasty.
- Whisk the sour cream with mustard, vinegar, sugar and pepper, then stir in a spoonful of the diced beetroot so the dressing itself goes pink.
- Fold everything together gently, keeping two eggs back and the dice intact, then chill 4 hours so the colour bleeds evenly through. 240 min
- Grate the reserved eggs over the top just before it goes to the table.
