Method

  1. Boil potatoes; blanch beans until snappy and shock in ice water.
  2. Whisk the vinaigrette; season assertively.
  3. Dress potatoes while warm: they drink it in.
  4. Compose everything on a platter; never toss into confetti.

How it should come out

  • Arranged in distinct groups on the platter, each element liftable on its own: tuna in large hand-broken flakes rather than shredded to floss, nothing tossed into confetti, no ingredient buried.
  • Beans are bright green and snap when bent, not olive-drab and floppy.
  • Halve a potato: the interior is glossy and seasoned to the centre, not dry and white under a merely wet skin.
  • Halve an egg: white fully set, yolk bright and just tacky at the middle, no grey-green ring at the boundary.
  • Tasted on its own the vinaigrette is sharp enough to sting, and it stays joined through service: the platter floor carries a light gloss, not a split pool under the potatoes.

Where it goes wrong The potatoes were dressed after they went cold, so the vinaigrette slides straight off them into a puddle under the platter and the salad reads bland while the bottom of the dish is oily.
