- 4 salmon fillets, 160g each, pin-boned; skin off for this method
- The bed: fennel shaved thin, leek julienne, or asparagus: quick-cooking vegetables only; the packet forgives nothing slow
- Per packet: splash of white wine or vermouth, 1 tsp butter, lemon slices, thyme or dill, salt
- 4 large squares of parchment, folded and crimped into half-moon seals

Method
- Fold each parchment square in half; open; vegetables on one side of the crease, salmon on top, seasoning, lemon, butter, wine.
- Fold the paper over and crimp the edge in small overlapping pleats, twisting the final corner tight: the seal IS the oven; a leaky packet is a tray-bake.
- Bake at 200°C, 10–12 min: the packets balloon like proud little zeppelins. 12 min
- Serve the packets sealed and puffed; snip open at the table: the escaping herb-lemon steam is the dish's introduction, and the pooled juices at the bottom are its sauce.
How to tell it is going right
This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

- The shell goes into the oven cold and the oven is fully up to heat, so the structure sets before the fat has time to melt out of it.
- Lined and weighted right into the corners rather than heaped in the middle, so the sides are held against the tin as the fat softens.
- Docked where it is not meant to puff, and the base stays flat rather than lifting into a dome under its own steam.
- The weights come out and the base gets dry heat of its own before anything wet arrives. Pale and damp is not baked, and a filling will not finish it.
- The edges are set and coloured and the shell releases from the tin rather than gripping it.
Where it goes wrong It went in warm, or the weights only filled the middle. The sides slump down the tin before the pastry sets, so the case is shallower than it should be, the filling overflows it, and the base is still raw underneath: the soggy bottom, arrived at three ways at once.

- Steam was running before the food went in: the water at a rolling boil and vapour coming steadily through the basket, rather than the whole thing warming up together.
- Nothing touches the water at any point: the food sits clear of it throughout, and the level neither drops enough to boil dry nor rises enough to wet it.
- The lid stayed on. Every lift costs the chamber its heat, and the number of lifts should be as close to none as the dish allows.
- Lifted out, the surface is glossy and plump with its colour heightened rather than dulled: greens brighter than they went in, not olive.
- Cooked through with the shape intact: it yields at the centre without having slumped or split, and there is no more than a spoonful of clean condensate beneath it.
Where it goes wrong The lid was loose or dripping and the condensate fell back onto the food, so it arrives waterlogged and pale with its seasoning washed down into the bottom of the dish.
