- 55g flour
- 750ml whole milk, warmed
- 1 tsp black pepper, plus more
- 1/4 tsp sage
- Pinch of cayenne
- Salt to taste

Method
- Brown the sausage in a cast-iron skillet over medium heat, breaking it into rough pieces and letting it stick and crust a little.
- Sprinkle the flour over the meat and its fat and cook 2 min, stirring, until the raw taste goes. 2 min
- Add the warm milk in a slow stream, whisking constantly to keep it smooth.
- Simmer 8-10 min until it coats a spoon; it thickens further off the heat, so stop a little thin. 10 min
- Season hard with black pepper, sage, cayenne, and salt. Ladle over split biscuits.
