- Chocolate sponge: 6 eggs, 150g sugar, 100g flour + 50g cocoa, 50g melted butter
- 1 jar sour cherries + juice; 2 tbsp cornstarch

- 800ml whipping cream, stabilized with a little gelatin or cream stiffener
- Dark chocolate shavings, whole cherries to crown

Method
- Bake the sponge; cool; slice into three layers.
- Thicken cherry juice with starch; fold in cherries. Soak each sponge layer shamelessly with kirsch.
- Stack: sponge, cherry filling, cream (twice); coat the whole in cream.
- Shave a chocolate bar into curls over everything; pipe rosettes; cherry on each. Chill 4 h. 240 min

Where it goes wrong A finish meant to sit on top went on while the bake was still warm. The layer that touched first melted, slid, and soaked in; what is left sets greasy and streaked, and no amount of chilling afterwards puts that finish back.
