Ingredients

  • 200 g pickled herring fillets, drained
  • 300 g cooked beetroot
  • 200 g cooked waxy potato, cold
  • 1 tart apple
  • 100 g pickled gherkins
  • 1 small onion
  • 2 tbsp white wine vinegar
  • 1 tbsp caster sugar
  • white pepper
  • 150 ml double cream, whipped soft
  • 2 hard boiled eggs

Method

  1. Cut the herring, potato, apple, gherkin and onion into even 8 mm dice, and dice the beetroot separately into its own bowl.
  2. Dress the pale dice with the vinegar, sugar and white pepper and taste; while it is still at room temperature it should read distinctly too sharp.
  3. Fold the beetroot through only at the end, turning just enough to marble the salad pink rather than stain it through.
  4. Cover and chill for at least four hours so the dice trade flavour, then taste again and adjust.
  5. Spoon the whipped cream over the top and finish with the eggs pushed through a coarse grater.

This dish has no standard of its own yet. It is judged on the technique it exercises: checked at the pan, while there is still something to be done about it.

  • The water was salted before anything went in, and tasting it confirms it: seasoned on the tongue, with the salt dissolved rather than sitting on the pot floor.
  • There is enough water, hot enough, that the pot returns to its boil quickly after the food goes in and never stops moving.
  • Where the dish uses the float as its signal, the signal is obeyed: the pieces rise and they come out then, not several minutes later once something else was finished.
  • Nothing is stuck to the bottom of the pot or welded to itself, and the water has not thickened into a cloudy sludge.
  • Drained on a bite rather than on the clock: resistance at the centre, with no chalky raw core.

Where it goes wrong The pot was too small and the water unsalted, so it never recovered its boil: the food sat in slack water, went gummy at the surface, and comes out bland in a way that no sauce afterwards can fix.
