  • 1 small chicken or 6 thighs; 1.5L water

Method

  1. Simmer chicken to a light broth, 40 min; shred the meat; strain the broth. 40 min
  2. Fry the pounded turmeric paste until the oil turns gold and the rawness leaves.
  3. Paste into broth with lemongrass and lime leaves; simmer 15 min. 15 min
  4. Build bowls: noodles, sprouts, chicken, egg; ladle the golden broth; let each eater garnish: lime and sambal are not optional.
