Ingredients

  • 800g beef shank, in 5cm pieces
  • 60g epis
  • 60ml sour orange juice
  • 1.2kg giraumon or other dense winter squash, peeled, seeded and cubed
  • 2.5L water
  • 400g waxy potatoes, cubed
  • 200g carrot, in batons
  • 200g turnip, cubed
  • 200g white cabbage, shredded
  • 100g celery, sliced
  • 150g rigatoni or other short pasta
  • 1 scotch bonnet, whole and unpierced
  • 4 sprigs thyme
  • 4 whole cloves
  • 40g butter
  • 15g salt
  • 1 lime

Method

  1. Rub the beef with the epis and sour orange juice and leave it while you peel; overnight in the fridge is better.
  2. Simmer the beef in the water with the thyme and cloves, skimming the grey foam off in the first ten minutes, until a piece shreds under a fork, about 90 minutes. 90 min
  3. Add the squash and cook until it falls apart at the touch of a spoon. Lift it out, work it to a smooth cream with a ladle of the broth, and stir it back in.
  4. Add the potato, carrot, turnip and celery and lay the whole chilli on top; simmer until a knife meets only slight resistance at the centre of a potato.
  5. Add the cabbage and pasta and cook to a shade under done. Lift the chilli out before it can split.
  6. Stir in the butter and the salt, then sharpen with lime to taste. The soup should coat the back of a spoon, not cling to it.

How to tell it is going right

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

The overnight rest: letting a dish marry 29 recipes

  • Cooled quickly before it went in (spread out, decanted, or stood in cold water) rather than carried to the fridge hot in the pot it was cooked in.
  • Protected from the rest of the fridge once cold: covered, or given space where nothing strong is sitting beside it. A rest this long is long enough to take on whatever it shares the shelf with, and some dishes want the open air.
  • Given the whole time. This is the one technique whose entire content is waiting, and cutting it short leaves the dish exactly as it was when it went in.
  • Brought back deliberately: reheated gently, or brought up to the temperature it is meant to be eaten at, rather than served straight out of the cold because it is late.
  • Tasted and corrected AFTER the rest. Seasoning and brightness both flatten in the cold, so the dish is finished at the end of the wait rather than at the start of it.

Where it goes wrong It went into the fridge hot and covered. It held its own heat for hours in the range where food spoils, and the lid sweated and dripped back into it all night: what comes out is duller and wetter than what went in, which is the exact opposite of the point.

  • It is held below a rolling boil for the whole time. Agitation drives fat and fine protein into the liquid as an emulsion, and nothing skimmed afterwards will take them back out.
  • The grey foam that rises in the first minutes is lifted off and discarded rather than stirred back in.
  • Fat is taken from the surface where it gathers, the pot moved off the centre of the heat if that is what it takes to collect it in one place.
  • The liquid is visibly clearer at the end than it was at the start: it is possible to see down into it.
  • Nothing lifted off goes back in. What was skimmed is discarded, not tipped back once the ladle is full.

Where it goes wrong The pot was allowed to boil, usually while something else was being attended to. Fat and protein emulsify into the liquid under agitation and cannot be lifted off afterwards, so the finished broth stays cloudy and greasy however patiently it is skimmed from then on.
