Spam Musubi

Ingredients

  • 1 can Spam, sliced in 8 even planks
  • 3 cups cooked short-grain rice, warm, lightly salted
  • Glaze: 2 tbsp soy + 2 tbsp sugar + 1 tbsp mirin
  • 4 nori sheets, halved into wide bands
  • The musubi mold, or the cleaned Spam can itself, the original tool

Method

  1. Fry the Spam planks until crisp-edged; add the glaze and let it lacquer both sides, 1 min. 1 min
  2. Press warm rice into the mold (or the can, plastic-lined) in a firm 2cm layer.
  3. Glazed Spam on top; press again; unmold the brick.
  4. Wrap the nori band around the middle, seam down, sealing with a damp finger. Serve at room temperature; gas stations set the standard here, genuinely.
