Method

  1. Whisk the eggs, milk, salt and nutmeg, beat in the flour with a wooden spoon, and keep beating hard for 4 to 5 minutes until the batter blisters and falls from the lifted spoon in one slow unbroken ribbon. 5 min
  2. Cover and rest 20 minutes so the gluten relaxes and the batter drops off the board cleanly instead of clinging in tails. 20 min
  3. Bring a wide pan to 100C (212F) salted at 10 g per litre, hold it at a lazy boil, and press or scrape the batter through in three batches so the water never falls off temperature.
  4. Lift each batch 30 seconds after it surfaces, about 90 seconds in all, into iced water if you are frying them later, or straight into foaming butter if you are not.

How to tell it is going right

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

Blanching & shocking 76 recipes

  • A large volume at a hard rolling boil, and enough of it that adding the food barely interrupts it; a pot that goes quiet has started stewing rather than blanching.
  • Timed rather than watched, and short. This is an interruption in the cooking of something, not the cooking of it.
  • The ice bath was made and standing beside the pot BEFORE anything went into the water, not started once the timer went off.
  • It went straight into the ice water, fully submerged, and stayed until cold at the centre: a piece still warm inside is still cooking, and the arrest has not happened yet.
  • Drained and dried afterwards rather than left sitting in water, so it does not carry that water into whatever it meets next.

Where it goes wrong The ice bath was not ready, so the food sat draining in a colander while its own residual heat carried on cooking it. By the time it cooled it was a stage past where it was pulled, and exact arrest is the entire reason for blanching rather than simply boiling.

Salted water & the float test 188 recipes

  • The water was salted before anything went in, and tasting it confirms it: seasoned on the tongue, with the salt dissolved rather than sitting on the pot floor.
  • There is enough water, hot enough, that the pot returns to its boil quickly after the food goes in and never stops moving.
  • Where the dish uses the float as its signal, the signal is obeyed: the pieces rise and they come out then, not several minutes later once something else was finished.
  • Nothing is stuck to the bottom of the pot or welded to itself, and the water has not thickened into a cloudy sludge.
  • Drained on a bite rather than on the clock: resistance at the centre, with no chalky raw core.

Where it goes wrong The pot was too small and the water unsalted, so it never recovered its boil: the food sat in slack water, went gummy at the surface, and comes out bland in a way that no sauce afterwards can fix.
