Tacos al Pastor (Home Trompo)

Ingredients
- 1.2kg pork shoulder, sliced into wide ½cm sheets (freeze 30 min for clean slicing)
- The adobo: 4 guajillo + 2 ancho chiles soaked, 3 tbsp achiote paste, ¼ cup pineapple juice, ¼ cup vinegar, garlic, oregano, cumin, clove, blended thick
- THE HOME TROMPO: a vertical skewer stood in a pan (or two skewers through the stacked meat), crowned with a thick pineapple slab; or a hot cast-iron sear for the honest weeknight
- Corn tortillas; minced onion, cilantro, lime; salsa of your conviction
- The taquero's flourish: a thin wedge of roasted pineapple flicked onto each taco

Method
- Marinate the pork sheets in adobo overnight: every face painted.
- Stack the sheets onto the vertical skewer, alternating orientation, packing tight into a rough cone; pineapple on top; roast at 200°C about 90 min until the edges char, carving as the outside crisps and returning the trompo to the oven between rounds. 90 min
- (Skillet road: sear the marinated sheets hard, then chop.) Crisp the shaved edges briefly on a hot plancha with a little of the drippings.
- Warm tortillas; meat, onion, cilantro, the pineapple wedge, lime, salsa. Small tacos, eaten in twos and threes, standing.
How it should come out
- Shaves come off in thin strips 2 to 3mm across, ragged and short, never cubes or slabs.
- The shaved meat is brick red from achiote through the full half-centimetre of each sheet, not stained on the outer face with pale pork underneath.
- Every spoonful holds two textures: lacquered crisp edges that crackle between the fingers against a soft interior, and no piece is soft the whole way through. Uniform tenderness is a failed pass.
- The pineapple wedge is charred at the edge, still holds its shape when lifted, and releases juice when bitten; it is a thin wedge on each taco, not a dice stirred through.
- The tortilla is warm and pliable enough to fold twice without cracking, and a 40 to 50g portion rides in it held in one hand without soaking through or spilling out the fold.
Where it goes wrong Seared and chopped and sent straight out, the meat never returning to the hot plancha, so there are no crisp edges anywhere and the taco tastes of marinated pork instead of al pastor.
