Method
- Fry the tortilla strips in the oil until crisp and golden; leave them in the pan.
- Add the onion and jalapeno and cook until soft.
- Add the tomato, then pour in the beaten eggs and scramble softly with the crisp tortilla strips.
- Fold in the cheese as the eggs set.
- Serve with warm tortillas, salsa, and refried beans.
