Method

  1. Beat eggs completely smooth with salt; no streaks of white.
  2. Melt butter over medium in a nonstick pan until foaming, not brown.
  3. Add eggs; stir rapidly with a fork or spatula while shaking the pan until softly set curds form.
  4. Off heat, let the base set 10 seconds, then roll onto the plate seam-side down.

How it should come out

  • Uniform pale blond over the whole surface, seam and both ends included; turn it under the light and no tan or freckled patch appears anywhere.
  • Cigar-shaped, closed at both ends, seam underneath; it holds its roll on the plate and does not slacken open.
  • Skin unbroken and dry to the eye: no curd bursting through a tear, and no butter or water weeping into a ring around it within thirty seconds of plating.
  • Cut across it: cream-fine moist curds top to bottom with no ropey white streaks of unbeaten albumen, the set base no thicker than a coin, and when the plate is tilted the centre slumps once and stops rather than running.
  • Seasoned evenly through: first bite and last taste the same, with no grains of salt sitting on the outside and no flat unsalted mouthful in the middle.

Where it goes wrong The pan ran hot and the eggs were left to sit between stirs, so the omelette comes up freckled tan on the seam side with the curds fused into one rubbery sheet instead of custard.
