- 300g cooked cold-water shrimp, peeled (the tiny sweet ones)
- 4 tbsp mayonnaise + 2 tbsp crème fraîche
- 1 tbsp Dijon, plenty of chopped dill, lemon juice, white pepper
- 4 slices white bread, crusts off, fried gold in butter
- Vendace or lumpfish roe to crown; a lemon wedge and a glass of something cold

Method
- Drain the shrimp seriously: wet shrimp drown the dressing.
- Fold shrimp with mayo, crème fraîche, mustard, dill, lemon; season.
- Butter-fry the bread to an even gold; cool 1 min so it stays crisp. 1 min
- Pile the skagenröra generously; crown with a spoon of roe and a dill sprig.
