Ingredients
- 4 birote rolls (Guadalajara's sour, hard-crusted torpedo: the crustiest sour roll you can find; it must survive drowning)
- 500g carnitas, warm and rough-chopped
- Refried beans, a thin structural smear
- The drowning sauce: 8 ripe tomatoes simmered with garlic, oregano and clove, blended and kept hot; plus the OPTIONAL widow-maker: chile de árbol salsa, fiercely hot
- Pickled red onions with lime; napkins beyond reason

Method
- Split the rolls keeping a hinge; smear beans; pack with warm carnitas.
- Ladle the hot tomato sauce over the WHOLE sandwich: ahogada means drowned; half-drowned (media) is permitted for beginners.
- Add the árbol salsa by the spoon according to your relationship with consequence.
- Crown with pickled onions; serve immediately in a shallow bowl with a fork and your sleeves rolled. Eat fast; the birote holds, but not forever.
