Method
- Boil the water; rain in a third of the flour, whisking, into a porridge; cook 3 min. 3 min
- Add the rest of the flour in stages, switching to the wooden spoon, folding and pressing hard against the pot.
- Cook 8–10 min, turning the mass, until it pulls cleanly off the sides and smells toasty. 10 min
- Turn out into a bowl; shape a dome. Tear with hands, dent with a thumb, scoop the stew.

- Nothing is trapped that should not be: no air pocket where filling should be, no filling breaking through the surface, and no excess flour greying the outside.

Where it goes wrong The dough was worked past its point or shaped without a rest, so it fought back: the pieces spring out of shape on the tray and bake tight, uneven, and torn along the surface.
