- 1.2kg fresh peaches, sliced
- 200g sugar
- 1 tbsp cornstarch
- 1 tsp cinnamon
- For the batter: 115g butter, 190g flour, 200g sugar, 2 tsp baking powder, 240ml milk
- Ice cream to serve

Method
- Toss the peaches with sugar, cornstarch, and cinnamon.
- Melt the butter in a Dutch oven, then whisk the flour, sugar, baking powder, and milk into a batter and pour it over the butter. Do not stir.
- Spoon the peaches over the batter; do not stir.
- Cover and bake with coals above and below, or at 190C, for 45-55 min until the cake rises around the fruit and browns. 55 min
- Serve warm from the pot with ice cream.
