  • 100g sugar
  • 150g rolled oats
  • 1/2 tsp salt
  • 170g melted butter
  • FOR THE FILLING
  • 400g fresh cranberries
  • 200g sugar
  • Zest and juice of 1 orange
  • 2 tbsp cornstarch

Method

  1. Cook the cranberries with the sugar, orange zest and juice, and cornstarch until they burst and thicken, 10 min. Cool. 10 min
  2. Mix the flour, sugar, oats, salt, and melted butter to crumbs.
  3. Press two-thirds into a lined pan and bake at 175C for 12 min. 12 min
  4. Spread the cranberry filling over and scatter the remaining crumb on top.
  5. Bake 25-30 min more until golden. Cool completely before cutting. 30 min
