Ingredients

  • 500g glutinous rice, soaked 4 h, drained, seasoned with 2 tbsp soy + 1 tsp five-spice (the savory southern road)
  • The heart: 300g pork belly marinated overnight in soy, shaoxing and sugar; salted duck egg yolks, halved; dried shiitake, soaked; optional chestnuts and dried shrimp
  • 40 dried bamboo leaves, boiled 5 min and wiped, plus kitchen string
  • The fold: two leaves overlapped into a cone, filled, capped, folded, and bound, a craft with a learning curve measured in generations
  • A deep pot and 2.5–3 hours of gentle boiling

Method

  1. Marinate the pork overnight; soak and season the rice; prep all fillings into an assembly line.
  2. Fold two leaves into a watertight cone; a layer of rice, then pork, yolk, mushroom, chestnut; rice to cap; fold the leaf tails over and around into a tight tetrahedron and bind with string, snug, not strangled; rice swells.
  3. Boil submerged (weight them with a plate) 2.5–3 h; top up with boiling water as needed. 180 min
  4. Rest 15 min; snip, unwrap, and eat from the leaf. They freeze impeccably; the season's labor feeds months. 15 min

How to tell it is going right

This dish has no standard of its own yet. It is judged on the technique it exercises: checked at the pan, while there is still something to be done about it.

  • Contact is total: every surface is wetted, and the pieces are not welded into a clump with dry faces where they pressed together.
  • The stated time was kept and kept cold, read against a clock, because this is the one technique where longer is a different result rather than a safer one.
  • It worked at the surface and no further: cut a piece and the marinade’s colour stops a few millimetres in. A protein gone opaque and chalky to the centre before any heat reached it has been cooked by the acid.
  • The texture is still springy and whole, not mushy, mealy, or fraying at the surface when it is lifted.
  • Where the next step browns it, the surface was patted dry first: a wet surface cannot brown, and the marinade’s sugars will scorch before the food colours.

Where it goes wrong It was left well beyond the stated time on the assumption that more is better, so acid and salt worked through the thin edges: those cook to cotton and read grainy while the thick centre tastes of nothing at all.
