Method

  1. Fry the diced potatoes in the oil until crisp and golden, 12 min; season and push to one side. 12 min
  2. Brown the sliced reindeer sausage in the same pan until the edges crisp.
  3. Add the onion and pepper and cook until softened.
  4. Make four wells in the mixture and crack the eggs in. Cover and cook 4-5 min until the whites set and the yolks stay soft. 5 min
  5. Scatter the cheese over, season, and serve with hot sauce straight from the skillet.

  • Everything sits in a single layer with visible space between the pieces: nothing stacked, nothing touching, or the pan is too small for the quantity.
  • The pieces move freely and keep moving, sliding across the pan rather than sticking and tearing when the pan is worked.
  • Light even browning arrived at quickly: colour on most faces, not the deep crust of a sear and not grey.
  • A thin film of fat with the food glossed by it: no pool left in the pan at the end, and nothing greasy on the fingers or the plate.

Where it goes wrong Too much went in at once, the pan cooled, and the food released its water: what was meant to brown in three minutes stews for ten and comes out grey, slack and wet.

  • No colour anywhere: tipped under the light the pieces are translucent to pale gold, with no tan edges, no brown tips, and no browned flecks suspended in the fat.
  • The pan is quiet: a low steady hiss, not a crackle. A crackle means the moisture has gone and browning has already started.
  • The largest piece pressed against the side of the pan collapses without resistance and with no crunch left at its centre.
  • The fat is still clear and loose in the pan and the pan floor is clean: nothing caught, nothing browned on to deglaze, because there was never any fond to build.
  • It tastes sweet and mild with no raw allium bite at the back of the throat, and none of the roasted sweetness that belongs to the next technique up the heat scale.

Where it goes wrong The heat was too high and nothing covered the pan, so the pieces took colour before they softened; the finished dish carries a roasty sweetness where it wanted a clean one, and the pieces are still firm at the centre under browned edges.
