Birria de Res con Consomé

Ingredients

  • 1.5kg beef chuck + short rib (or the traditional goat), big chunks
  • The adobo: 6 guajillo + 3 ancho + 2 chipotle chiles, toasted and soaked; 4 garlic, ½ onion, 1 tbsp vinegar, cumin, oregano, clove, cinnamon, blended smooth
  • 2 bay leaves, 1L stock or water; salt boldly
  • For the tacos: corn tortillas, melting cheese, minced onion + cilantro, lime
  • The pot's own consomé, skimmed, served alongside in cups: the dish is a soup AND its own condiment

Method

  1. Blend the adobo; strain it; marinate the beef in it overnight if you can.
  2. Sear the meat; pour over the adobo and stock; braise covered at 150°C or a bare simmer 3–3.5 h until it shreds at a glance. 300 min
  3. Shred the meat; skim the consomé and keep it hot: the red fat on top is treasure, not waste.
  4. For quesabirria: dip tortillas IN the fatty consomé, griddle, fill with meat and cheese, fold, crisp both sides. Serve with cups of consomé for dunking, onion-cilantro, lime.

How it should come out

  • In the cup, a distinct red-orange fat cap sits on a deep russet broth. Grey fat means the chiles gave up nothing.
  • The consomé is smooth on the tongue, with no chile-skin fragments and no grit settling in the bottom of the cup.
  • The meat falls apart under a single fork with no pull, and a shred pulled open is wet through rather than dry and cottony at the core. Shredded back into the pot it goes red throughout, and that colour comes from the tossing, not from waiting for a marinade to reach the middle of a chunk.
  • A dipped and griddled tortilla is stained edge to edge, crisp on both faces, and folds without cracking along the crease; torn open, the cheese pulls in strings.
  • Taste the consomé from a cup rather than off a spoon at the pot: it should be seasoned to be drunk on its own. Lime adds lift to it and should never be needed to rescue it.

Where it goes wrong Burnt-coffee bitterness through the whole pot, because the chiles went a few seconds past fragrant on the comal and blistered black. Three hours of braising deepens that bitterness rather than burying it, and neither salt nor lime lifts it out.
