  • 300g smoked sausage, sliced
  • 2 onions, diced
  • 3 celery ribs, diced
  • 400g long-grain rice
  • 1.5L chicken stock
  • 1 bay leaf
  • 1 tsp thyme
  • Salt, black pepper, and cayenne

  1. Simmer the chicken in the stock 45 min until tender. Lift out, pull the meat, and keep the broth. 45 min
  2. Brown the sausage in the pot, then sweat the onion and celery in the rendered fat.
  3. Add the rice and stir 1 min, then add the measured broth, bay, and thyme. 1 min
