Bollito Misto con Salsa Verde

Ingredients

  • 1.2 kg beef brisket or cappello del prete
  • 1 veal tongue, about 900 g
  • 1 boiling hen, about 1.5 kg
  • 1 raw cotechino, about 500 g
  • 3 carrots, whole
  • 3 celery stalks
  • 2 onions, halved
  • 20 g coarse salt
  • 100 g flat parsley leaves
  • 40 g white bread crumb
  • 30 ml red wine vinegar
  • 6 anchovy fillets
  • 30 g capers, rinsed
  • 1 garlic clove
  • 1 hard boiled egg yolk
  • 180 ml olive oil

Method

  1. Bring a large pot of water to a rolling boil with the carrots, celery, onions and salt, lower the brisket straight into it, and hold it at a bare simmer for 3 hours. 180 min
  2. Cook the tongue in a second pot of boiling water for 2.5 hours and peel the skin away while it is still too hot to hold comfortably; once cold it will not come off at all. 300 min
  3. Add the hen to the brisket pot for its last 2 hours, until the thigh reads 74C (165F) at the joint, and poach the cotechino in its own water at 80C (175F) for 3 hours so its fat does not cloud the broth. 120 min
  4. Soak the bread crumb in the vinegar, then chop it together with the parsley, anchovy, capers, garlic and egg yolk and beat in the oil to a loose, spoonable green sauce.
  5. Carve everything across the grain onto a warm platter, ladle a little hot broth over to keep it wet, and pass the salsa verde.

How to tell it is going right

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • It came off the heat BEFORE the target temperature, measured with a probe rather than by time, because carryover keeps driving the inside up after it is out.
  • The probe went into the coldest likely part rather than the easiest one to reach: the reading that matters is the lowest one, not the first one.
  • Rested for a time matched to its size, somewhere warm, and not cut into partway through to see how it is doing.
  • The board is nearly dry when it is finally cut. A spreading pool means it was cut too early, and that liquid should have stayed inside.
  • The grain was found and the knife went ACROSS it, so the fibres are cut short, and the blade was sharp enough that the slices hold together rather than tearing.

Where it goes wrong It was cut straight off the heat, usually because everything else was ready. The muscle is still contracted and the juice still driven to the centre, so it runs out onto the board; the meat is drier than it ever needed to be, and the flavour that left it is sitting in a puddle under the knife.

  • The surface is read rather than assumed: bubbles break slowly in one or two places, or the surface merely shivers, and it does not reach a rolling boil at any point.
  • It was held there: the pot was watched and the heat adjusted rather than set once and left, and there is no tide mark up the pot wall from a boil-over.
  • The liquid stayed as clear as it should be: no clouding from agitation, and no fat churned into an emulsion through it.
  • Whatever is in the liquid is still intact: nothing shredded, broken up, or worried apart by movement.
  • The level is roughly where the elapsed time should have left it; a large drop is the evidence that it ran hotter than this while nobody was looking.

Where it goes wrong It was brought to a boil and then left on the same heat, so it churned for the whole cook: the liquid clouded, the fat emulsified into it, and the solids broke apart into the broth.
