- 1 litre fresh pig's blood, strained
- 500 g pork back fat, diced 5 mm
- 400 g onions, finely sliced
- 200 ml double cream
- 25 g fine salt
- 4 g quatre epices
- 3 g ground white pepper
- 2 m hog casings, 32-34 mm, soaked and rinsed
- 2 firm apples, in 1 cm wedges
- 30 g unsalted butter

Method
- Render 100 g of the back fat gently, add the onions and cook over low heat until completely soft and translucent with no colour, about 25 minutes, then cool below 30C (86F). 25 min
- Whisk the blood with the cream, salt, quatre epices and pepper, then pass it through a fine sieve to catch any strands of clot.
- Fold in the cooled onions and the remaining diced fat, then fill the casings loosely to two-thirds and twist into 15 cm links.
- Poach in water held steady at 80C (176F) for 25 to 30 minutes, until a needle pushed into a link comes out clean with no bead of blood, then chill at once in ice water. 30 min
- To serve, fry the apples in the butter until caramelised, lay in 2 cm slices of boudin and warm them through gently on both sides until glossy.

- The surface is read rather than assumed: bubbles break slowly in one or two places, or the surface merely shivers, and it does not reach a rolling boil at any point.
- It was held there: the pot was watched and the heat adjusted rather than set once and left, and there is no tide mark up the pot wall from a boil-over.

Where it goes wrong It was brought to a boil and then left on the same heat, so it churned for the whole cook: the liquid clouded, the fat emulsified into it, and the solids broke apart into the broth.
