Method
- Rinse the rice until the water runs clear, cook it, then fold through the warmed vinegar, sugar, and salt. Cool to body temperature.
- Lay a nori sheet on a rolling mat covered in cling film and spread rice over it, then flip so the nori faces up: this is the inside-out roll.
- Lay the crab, avocado, and cucumber along the center.
- Roll tightly with the mat, pressing to compact.
- Roll the outside in sesame seeds and cut with a wet knife into eight pieces.
How to tell it is going right
This dish has no standard of its own yet. It is judged on the technique it exercises: checked at the pan, while there is still something to be done about it.
