Method
- Sweat the leek, carrot, and mushrooms in butter until the mushroom liquid cooks away.
- Stir in the flour, cook 2 min, then whisk in the stock gradually until thickened. 2 min
- Add cream, thyme, and chicken; off the heat, stir in the cheddar until melted. Season well.
- Fill a deep dish, top with pastry, seal, vent, and brush with egg.
