- 8 chicken thighs, bone-in
- 3 tbsp sweet Hungarian paprika, fresh tin, not the dusty relic
- 2 onions, minced fine; 1 tomato; 1 Hungarian wax pepper
- 300ml chicken stock
- 200ml sour cream + 1 tbsp flour, whisked; nokedli or noodles

Method
- Brown chicken; set aside. Melt onions slowly in the fat.
- OFF THE HEAT stir in paprika: 30 seconds, no more, it burns bitter fast.
- Chicken back with stock, tomato, pepper; simmer 35 min. 35 min
- Temper the flour-sour cream with hot sauce, then stir in; do not boil again.

- The hot liquid went into the eggs a little at a time with constant whisking, and only then did everything go back to the pot.
- The heat under it stayed gentle throughout and it was never allowed to boil.

Where it goes wrong The hot liquid went in too fast, or the pot went back over full heat to save time. The yolks set into threads before they could thicken smoothly, and a scrambled custard does not come back; straining hides a little of it and nothing hides the rest.
