  • 1 onion, diced
  • 3 celery ribs, diced
  • 4 garlic cloves, minced
  • 1 bay leaf
  • 1 tsp thyme
  • 1.5L chicken stock
  • Salt, black pepper, and hot sauce
  • Cornbread to serve

Method

  1. Brown the sausage in a heavy pot until it renders and colors; lift out and reserve.
  2. Sweat the onion, celery, and garlic in the fat until soft.
  3. Add the drained beans, bay, thyme, and stock and simmer 90 min until the beans are creamy. 90 min

  5. Season and serve with cornbread and hot sauce.
