Method
- Beat the cutlets between two sheets to an even 6 mm; thicker than that and the crumb burns long before the centre is hot.
- Flour, egg and crumb them, pressing the crumb on firmly, then rest them 15 minutes so the coating sets and will not slide off in the pan. 15 min
- Fry in clarified butter over moderate heat until both faces are an even hazelnut brown and the crust sounds hollow when tapped, about 3 minutes a side. 3 min
- Lay a slice of prosciutto and a drift of Parmigiano on each, pour the broth around the cutlets and no more than a third of the way up, then cover and hold at the lowest heat until the cheese has slumped and the broth is syrupy, 5 minutes. 5 min
How to tell it is going right
This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.
Sautéing & the shallow fry 80 recipes
- Everything sits in a single layer with visible space between the pieces: nothing stacked, nothing touching, or the pan is too small for the quantity.
- The pieces move freely and keep moving, sliding across the pan rather than sticking and tearing when the pan is worked.
- Light even browning arrived at quickly: colour on most faces, not the deep crust of a sear and not grey.
- A thin film of fat with the food glossed by it: no pool left in the pan at the end, and nothing greasy on the fingers or the plate.
- Cooked through but still firm, having spent only a few minutes in the pan: anything that has gone soft has been in there too long.
Where it goes wrong Too much went in at once, the pan cooled, and the food released its water: what was meant to brown in three minutes stews for ten and comes out grey, slack and wet.
The coat before the fry: dredge, crumb, batter 80 recipes
- The coat is continuous before it goes anywhere near the fat: held up to the light, no bare patch of food shows through anywhere, seams and thin edges included.
- It is bonded rather than resting on top: a gentle shake sheds loose dust only, and the coat does not slide off as a sheet when the piece is handled.
- It bubbles hard and steadily from the moment it enters the fat, and the bubbling visibly slows as it finishes; those bubbles are the surface water leaving, and a quiet entry means the fat is too cool.
- Out and drained, it is an even gold-brown all over and it is still crisp several minutes later on a rack; a coat that softens within a minute of coming out never lost its water.
- Broken open, there is no paste of raw flour under the crust and no hollow gap where the coat has lifted away from the food.
Where it goes wrong The fat was below temperature or the pan was crowded, so the coat drank fat instead of sealing against it: it comes out pale and heavy, greasy to the fingers, and slumps off the food as it cools.

Pork loves fruit and gentle sweetness: orchard-note whites and low-tannin reds flatter it where heavy oak flattens.
