Lacto-Fermented Red Chilli Sauce

  • 1 kg red chillies such as fresno or red jalapeno, stems removed
  • 60 g garlic cloves, peeled
  • 32 g fine non-iodised sea salt (3 percent of the mash weight)
  • 120 ml white wine vinegar, to finish

Method

  1. Blitz the chillies and garlic to a coarse mash, weigh it, then work in salt at 3 percent of that weight until the mash slackens and turns wet and glossy.
  2. Pack into a jar, press down until liquid rises over the solids, weight them under, and leave 5 cm of headspace beneath an airlock or a lid you burp daily.
  3. Ferment at 20 to 24C (68 to 75F): it bubbles hard by day 3, the colour dulls from scarlet to brick, and the raw green smell turns sour and fruity by day 14.
  4. Blend smooth with the vinegar and check that a strip reads pH 3.6 or lower before it leaves the jar.
  5. Bottle and refrigerate; pass it through a coarse sieve first if you want it pourable.

How to tell it is going right

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • Held somewhere with a steady temperature it can actually work at, chosen on purpose rather than wherever there happened to be room.
  • There is visible activity before it is called started: bubbles, rise, or movement in the liquid. A ferment showing nothing after its first hours is not slow, it is not going.
  • It smells clean: sour, yeasty, or alcoholic, with nothing putrid, and with nothing fuzzy or coloured growing where air meets it.
  • Everything is under the liquid or under a cover, as the method requires: nothing solid left sitting dry in the air to spoil while the rest works.
  • Judged by taste and behaviour and then STOPPED: chilled, baked, or refrigerated at the point wanted, rather than left running because the stated hours had not elapsed.

Where it goes wrong It was run on the clock in a kitchen colder or warmer than the recipe assumed. Fermentation is a rate and not a duration, so the same number of hours gives an under-developed ferment in a cold room and a slack, over-soured one in a warm one, and only tasting it would have said which.

  • Smooth to the degree the dish asks for, judged on the tongue rather than by eye: no lumps, no fibres, no grit, unless texture is the point.
  • No gluey elasticity: a spoonful drops cleanly off the spoon rather than stretching in a rope behind it.
  • The consistency holds: it mounds on a spoon and stays there, neither slumping flat nor standing so stiff that a spoon has to cut it.
  • Nothing separates on the plate: no water or fat weeping out into a ring within a minute of serving.
  • The colour is even throughout, with no streaks of unincorporated fat, liquid, or seasoning at the edges of the bowl.

Where it goes wrong A starchy ingredient met a high-speed blade, so the cells burst and released their starch: what should be light comes out as an elastic glue that lifts off the spoon in one mass.
