Lamb Brains with Black Butter

Ingredients
- 4 sets lamb brains, about 500 g
- 1 litre cold water with 10 g salt, for soaking
- 50 ml white wine vinegar, plus 30 ml to finish
- 1 bay leaf, 1 sliced carrot and 6 peppercorns
- 50 g plain flour, seasoned
- 100 g unsalted butter
- 25 g capers, rinsed
- 10 g flat parsley, chopped
- Fine salt and black pepper

Method
- Soak the brains in the salted cold water in the fridge for 2 hours, changing it three times, until they are white and the water stays clear. 120 min
- Peel off the fine outer membrane and the threads of vessel under a trickle of cold water, working gently so the lobes stay whole.
- Poach in water with the 50 ml vinegar, bay, carrot and peppercorns held at 80C (176F) for 15 minutes without ever letting it bubble, then cool them in the liquid and chill. 15 min
- Halve the lobes, pat dry, dust in the seasoned flour and fry in 30 g of the butter until crisp and gold on both sides.
- Wipe the pan, cook the rest of the butter to a dark hazelnut that smells nutty and stops foaming, add the capers, then take it off the heat, add the 30 ml vinegar and the parsley, and pour it over.
How to tell it is going right
This dish has no standard of its own yet. It is judged on the technique it exercises: checked at the pan, while there is still something to be done about it.

- The surface is read rather than assumed: bubbles break slowly in one or two places, or the surface merely shivers, and it does not reach a rolling boil at any point.
- It was held there: the pot was watched and the heat adjusted rather than set once and left, and there is no tide mark up the pot wall from a boil-over.
- The liquid stayed as clear as it should be: no clouding from agitation, and no fat churned into an emulsion through it.
- Whatever is in the liquid is still intact: nothing shredded, broken up, or worried apart by movement.
- The level is roughly where the elapsed time should have left it; a large drop is the evidence that it ran hotter than this while nobody was looking.
Where it goes wrong It was brought to a boil and then left on the same heat, so it churned for the whole cook: the liquid clouded, the fat emulsified into it, and the solids broke apart into the broth.
