Ingredients
- The golden broth: 1 whole chicken or 1.5kg wings and backs, 2 onions (one halved and CHARRED), carrots, celery, parsnip, dill stems, peppercorns; simmered 2.5 h at a whisper and strained clear
- Matzo balls: 120g matzo meal, 4 eggs, 4 tbsp schmaltz (chicken fat, the flavor is the point) or oil, 4 tbsp seltzer, salt, pinch of ginger
- The eternal question, answered by household: floaters (add ½ tsp baking powder, more seltzer) or sinkers (denser, defiant)
- Carrot coins simmered soft; fresh dill, a forest

Method
- Build the broth low and slow, skimming; the charred onion gives the amber; strain and season it until it tastes like the answer to a question.

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

- It is cold through rather than cold at the edge: tested at the middle it is as firm as it is at the rim.
- It holds its shape unsupported; it can be cut, portioned, rolled or lifted without slumping, tearing, or sticking to the hands.
- The fat in it has gone solid: it feels firm and waxy to the fingers rather than greasy and yielding.

Where it goes wrong It was given twenty minutes instead of the hours it needed, so it is firm at the rim and soft at the core: it slumps out of shape as it is portioned, and everything made from it spreads or breaks apart in the pan.

- It is held below a rolling boil for the whole time. Agitation drives fat and fine protein into the liquid as an emulsion, and nothing skimmed afterwards will take them back out.
- The grey foam that rises in the first minutes is lifted off and discarded rather than stirred back in.
- Fat is taken from the surface where it gathers, the pot moved off the centre of the heat if that is what it takes to collect it in one place.
- The liquid is visibly clearer at the end than it was at the start: it is possible to see down into it.
- Nothing lifted off goes back in. What was skimmed is discarded, not tipped back once the ladle is full.
Where it goes wrong The pot was allowed to boil, usually while something else was being attended to. Fat and protein emulsify into the liquid under agitation and cannot be lifted off afterwards, so the finished broth stays cloudy and greasy however patiently it is skimmed from then on.
