Ingredients
- 400 g waxy potatoes, in 3 cm chunks
- 150 g carrot, in 2 cm batons
- 100 g French beans, in 4 cm lengths
- 150 g shallots, sliced thick
- 25 g ginger, julienned
- 5 green chillies, slit
- 12 black peppercorns
- 5 cm cassia bark, 4 cloves, 4 green cardamom pods
- 3 sprigs curry leaves
- 2 tbsp coconut oil
- 400 ml thin coconut milk (randam paal)
- 200 ml thick coconut milk (onnam paal)
- 1 1/2 tsp salt

Method
- Warm the coconut oil over low heat and bruise in the peppercorns, cassia, cloves and cardamom until the pods split and the oil smells of them, letting nothing take colour.
- Add the shallots, ginger, green chilli and curry leaves and sweat until the shallots are translucent and slumped but still ivory.
- Pour in the thin coconut milk with the potatoes, carrot and salt and simmer uncovered until a knife tip slides into the potato and the liquid has thickened enough to coat it.
- Add the beans and cook until they turn bright green and lose their raw squeak.
- Lift the pan off the heat, stir in the thick coconut milk and swirl until the ishtu is glossy and ivory and steaming, with no bubble breaking the surface.
How to tell it is going right
This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

Where it goes wrong The knife was dull, or the vegetable was never squared off first, so the pieces vary: the small ones are mush by the time the large ones are cooked, and the dish has two textures where it wanted one.

- The pan is quiet: a low steady hiss, not a crackle. A crackle means the moisture has gone and browning has already started.
- The largest piece pressed against the side of the pan collapses without resistance and with no crunch left at its centre.
- The fat is still clear and loose in the pan and the pan floor is clean: nothing caught, nothing browned on to deglaze, because there was never any fond to build.
- It tastes sweet and mild with no raw allium bite at the back of the throat, and none of the roasted sweetness that belongs to the next technique up the heat scale.
Where it goes wrong The heat was too high and nothing covered the pan, so the pieces took colour before they softened; the finished dish carries a roasty sweetness where it wanted a clean one, and the pieces are still firm at the centre under browned edges.
