Method

  1. Brown the chorizo in a heavy pot until it renders; lift out and reserve.
  2. Sweat the onion, garlic, and pepper in the fat until soft.
  3. Add the paprika, tomatoes, drained beans, and stock.
  4. Simmer 90 min until the beans are creamy, then return the chorizo and cook 20 min more. 90 min
  5. Mash a few beans to thicken and season well.

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • It started cold or low and came up slowly: fat that met a hot pan seizes and scorches before the inside can melt, and there is no recovering it.
