Method
- Season the short ribs hard and brown all sides in the oil; set aside.
- Sweat the onion, carrot, and celery until soft, add the garlic and tomato paste, and cook until brick red.
- Add the wine and reduce by half: this cooks off the raw alcohol and concentrates the fruit.
- Return the ribs with the stock, bay, and thyme. Cover and braise at 150C for 3 hours until the meat pulls from the bone. 180 min
- Rest, skim the fat, and reduce the sauce until it coats a spoon.

- The pieces went into the liquid already deep brown on their faces, and the pot floor gave up its fond to that liquid rather than keeping it.
- The liquid comes partway up the pieces and stays there for the whole cook (not submerged, not run dry), and it never boils: the surface trembles and no more.
- It went long enough for the collagen to convert: a fork twists in it with almost no resistance, and the piece still lifts out whole rather than falling into shreds.
- The liquid has become a sauce: it has body, it coats the back of a spoon, and it tastes concentrated rather than thin and washed out.

Where it goes wrong The oven or the burner ran too hot and the liquid boiled, so the fibres tightened and squeezed their moisture out: it shreds dry into a thin greasy liquid, and more time makes it worse rather than better.

- It is held below a rolling boil for the whole time. Agitation drives fat and fine protein into the liquid as an emulsion, and nothing skimmed afterwards will take them back out.
- The grey foam that rises in the first minutes is lifted off and discarded rather than stirred back in.
- Fat is taken from the surface where it gathers, the pot moved off the centre of the heat if that is what it takes to collect it in one place.
- The liquid is visibly clearer at the end than it was at the start: it is possible to see down into it.
- Nothing lifted off goes back in. What was skimmed is discarded, not tipped back once the ladle is full.
Where it goes wrong The pot was allowed to boil, usually while something else was being attended to. Fat and protein emulsify into the liquid under agitation and cannot be lifted off afterwards, so the finished broth stays cloudy and greasy however patiently it is skimmed from then on.
