  • 400 g ripe tomatoes, peeled, seeded and chopped

  • 180 ml single cream
  • 250 g fresh melting cheese, coarsely grated
  • 2 g ground cumin

Method

  1. Boil the potatoes in well salted water until a knife meets no resistance at the centre, then drain them and hold them warm.
  2. Sweat the spring onion in the butter over low heat until it is limp and sweet with no raw squeak left in it.
  3. Add the tomato and cumin and cook until the pieces have slumped and the pan no longer runs watery, then pour in the cream and warm it through.
  4. Pull the pan off the heat, stir in the cheese in three handfuls until it hangs in soft threads, and pour it over the potatoes at once.

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • The water was salted before anything went in, and tasting it confirms it: seasoned on the tongue, with the salt dissolved rather than sitting on the pot floor.
  • There is enough water, hot enough, that the pot returns to its boil quickly after the food goes in and never stops moving.
  • Where the dish uses the float as its signal, the signal is obeyed: the pieces rise and they come out then, not several minutes later once something else was finished.
  • Nothing is stuck to the bottom of the pot or welded to itself, and the water has not thickened into a cloudy sludge.
  • Drained on a bite rather than on the clock: resistance at the centre, with no chalky raw core.

Where it goes wrong The pot was too small and the water unsalted, so it never recovered its boil: the food sat in slack water, went gummy at the surface, and comes out bland in a way that no sauce afterwards can fix.

  • No colour anywhere: tipped under the light the pieces are translucent to pale gold, with no tan edges, no brown tips, and no browned flecks suspended in the fat.
  • The pan is quiet: a low steady hiss, not a crackle. A crackle means the moisture has gone and browning has already started.
  • The largest piece pressed against the side of the pan collapses without resistance and with no crunch left at its centre.
  • The fat is still clear and loose in the pan and the pan floor is clean: nothing caught, nothing browned on to deglaze, because there was never any fond to build.
  • It tastes sweet and mild with no raw allium bite at the back of the throat, and none of the roasted sweetness that belongs to the next technique up the heat scale.

Where it goes wrong The heat was too high and nothing covered the pan, so the pieces took colour before they softened; the finished dish carries a roasty sweetness where it wanted a clean one, and the pieces are still firm at the centre under browned edges.
