Proper Fish Pie

Ingredients

  • 700g mixed fish: salmon, smoked haddock (the flavor spine), firm white fish; poached 5 min in 500ml milk with bay and onion
  • 150g raw prawns; 3 boiled eggs, quartered, the traditional punctuation
  • The sauce: 50g butter, 50g flour, the strained poaching milk, 1 tsp Dijon, big handful parsley, squeeze of lemon
  • 1.2kg floury potatoes, mashed with 100g butter and hot milk, seasoned like you mean it
  • A grating of cheddar over the mash; peas alongside, per national instinct

Method

  1. Poach the fish gently in the milk; lift out and flake into large pieces into the baking dish, evicting any bones; scatter prawns and eggs among them.
  2. Roux, then the smoky poaching milk, whisked to a silken parsley sauce; mustard and lemon; pour over: the sauce should hug, not drown.
  3. Crown with mash, sealing to the dish edges (the seal prevents eruptions); furrow with a fork; cheese over.
  4. Bake 200°C, 30–35 min until bronzed at the ridges and bubbling at the borders. Rest 10 minutes: fish pie lava is a known domestic hazard. 35 min

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • Taken to the stage the dish named and no further, judged against that colour (pale, blond, or brown to brick), and it got there slowly enough to have coloured evenly.
  • It is smooth and mobile: a paste with no dry pockets of flour and no lumps, loosening as it warms rather than sitting stiff in the pan.
  • The raw-flour smell has gone and been replaced by the toasted, biscuity smell of its stage, with nothing acrid behind it.
  • No black specks anywhere. One scorched fleck condemns the batch; it cannot be stirred back in and it will be tasted in the finished sauce.

Where it goes wrong The heat was too high and the corners of the pan went unstirred, so it scorched at the edge; black specks run through the finished sauce and carry a bitterness that no amount of seasoning covers.

  • No gluey elasticity: a spoonful drops cleanly off the spoon rather than stretching in a rope behind it.
  • The consistency holds: it mounds on a spoon and stays there, neither slumping flat nor standing so stiff that a spoon has to cut it.
  • Nothing separates on the plate: no water or fat weeping out into a ring within a minute of serving.
  • The colour is even throughout, with no streaks of unincorporated fat, liquid, or seasoning at the edges of the bowl.

Where it goes wrong A starchy ingredient met a high-speed blade, so the cells burst and released their starch: what should be light comes out as an elastic glue that lifts off the spoon in one mass.
