- 10 g tarragon and chervil leaves
- 10 g salt per litre for the potato water, 1 percent
- 20 g salt per litre for the bean water, 2 percent

Method
- Start the potatoes in cold 1 percent salted water, bring to a bare tremble and cook 18 to 22 minutes, until a knife slides to the centre and withdraws with no drag. 22 min
- Drain, halve, and dress with a third of the vinaigrette while they read about 55C (131F) to the finger; warm swollen starch drinks the dressing, and a cold potato sheds it.
- Boil the beans in 2 percent water for 3 minutes, until they bend without snapping, then plunge into iced water and lift them out the instant they are cold, before the green slides toward olive. 3 min
- Lower the fridge-cold eggs into rolling water for 6 minutes 30 seconds, chill 3 minutes in ice, peel and halve; the yolk should be set at the rim and jammy at the centre. 6 min
- Season and dress each element on its own, then build from the base up: potatoes, beans, shallot and capers, the leaves turned last in the remaining vinaigrette, eggs on top with flaky salt on the cut yolk.

- A large volume at a hard rolling boil, and enough of it that adding the food barely interrupts it; a pot that goes quiet has started stewing rather than blanching.
- Timed rather than watched, and short. This is an interruption in the cooking of something, not the cooking of it.

- The surface is read rather than assumed: bubbles break slowly in one or two places, or the surface merely shivers, and it does not reach a rolling boil at any point.
- It was held there: the pot was watched and the heat adjusted rather than set once and left, and there is no tide mark up the pot wall from a boil-over.
- The liquid stayed as clear as it should be: no clouding from agitation, and no fat churned into an emulsion through it.
- Whatever is in the liquid is still intact: nothing shredded, broken up, or worried apart by movement.
- The level is roughly where the elapsed time should have left it; a large drop is the evidence that it ran hotter than this while nobody was looking.
Where it goes wrong It was brought to a boil and then left on the same heat, so it churned for the whole cook: the liquid clouded, the fat emulsified into it, and the solids broke apart into the broth.
