Method

  1. Steam the quahogs open in a little water, reserving the liquor. Chop the meat and scrub 12 half shells for stuffing.
  2. Sweat the onion, celery, and chourico in the butter until soft and the sausage has rendered.
  3. Off the heat, mix in the cracker crumbs, chopped clams, parsley, Old Bay, and enough strained clam liquor to make a moist but not wet stuffing.
  4. Mound into the shells and set on a tray.
  5. Bake at 190C for 20-25 min until the tops are browned and crisp. Serve with lemon and hot sauce. 25 min

  • There is a real volume of it: enough to film the pan floor and be poured off and kept, not a dry smear that never ran.

Where it goes wrong The heat was raised to hurry it along, so the outside seized and browned before the interior fat could melt; very little runs out, and the solids come out burnt on the outside and rubbery within.
