Ingredients
- 1L cold water
- 60g coarsely ground coffee
- A splash of cold water for settling
- An enamel pot, ideally over a fire

Method
- Bring the water to a boil in the pot, then pull it off the heat for 30 seconds.
- Stir in the coarse grounds and return to a bare simmer for 4 minutes. 4 min
- Take the pot off the heat and let it stand 2 minutes. 2 min
- Sprinkle a splash of cold water over the surface: this drops the grounds to the bottom.
- Pour slowly and steadily, leaving the last inch in the pot.

- The surface is read rather than assumed: bubbles break slowly in one or two places, or the surface merely shivers, and it does not reach a rolling boil at any point.

- The liquid stayed as clear as it should be: no clouding from agitation, and no fat churned into an emulsion through it.

Where it goes wrong It was brought to a boil and then left on the same heat, so it churned for the whole cook: the liquid clouded, the fat emulsified into it, and the solids broke apart into the broth.
