Two preserved-sour families the menu should distinguish. QUICK PICKLING: vinegar, sugar, salt poured over: sour today, no microbes involved. LACTO-FERMENTATION: salt (2–3% by weight) suppresses bad microbes while lactobacillus converts sugars to lactic acid (sauerkraut, kimchi, real dill pickles, curtido), living sour with depth vinegar can't fake. Adjacent kingdoms: KOJI (Aspergillus mold on rice/barley) powers miso, soy sauce, and modern dry-age shortcuts; yeast ferments bread and beer; SCOBYs make kombucha and vinegar itself. Ferments are how a restaurant builds house flavor no supplier can sell the competition.
