- 1.5 kg green bananas (guineos verdes), about 12
- 2 tbsp white vinegar for the cooking water
- 250 ml olive oil
- 120 ml cider vinegar
- 300 g onions, in thin rings

- 80 g pitted green olives
- 1 tsp fine salt

Method
- Cut the ends off the bananas and score the skin the length of each one, cutting through the peel only.
- Boil them in their skins in salted water with the 2 tbsp vinegar until a knife meets slight resistance at the centre, 15 to 18 minutes; cooked soft, they will fall apart later. 18 min
- Meanwhile warm the olive oil with the onion, garlic, bay and peppercorns over low heat until the onion is limp and translucent but not coloured, then add the cider vinegar, olives and salt and bring it to a bare simmer.
- Peel the hot bananas holding them in a cloth, cut them into 2 cm lengths, and pour the warm escabeche over while both are still hot.
- Turn once, cool to room temperature, then refrigerate at least 4 hours. Serve at room temperature, never fridge cold, or the oil is waxy on the tongue. 240 min

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

- Lift one cut open with a fingertip: it parts through the skin and stops in the fat beneath, showing a pale wall at its base. Any cut showing red or fibrous flesh has gone too deep; any that has not reached the fat has left the skin tethered, and it will tighten under heat.
- The lines run parallel at even spacing, roughly a finger's width apart, each carried the full length of the face and stopped the same margin short of the edge. Sight down them: lines that converge, wander or crowd at one end cook at different rates and read as careless on the plate.
- Each line is one clean draw of the blade held at a slant, not a sawn or doubled track, and it leaves a bevelled lip standing slightly proud rather than a vertical slot. The surface should be dry and cold, near 4C (39F), when it is cut; worked warm and slack it drags, and the blade tears where it should part.
- After cooking the cuts have opened and set, each a clear gap with firm browned walls. Lines closed back to faint scratches were cut too shallow or too straight down, and the surface has shrunk over them instead of through them.
- The piece lies flat and true when it is set down, with no cupping through the middle and no lifted, curled edge. A bowed piece means the tightening surface was never released, so it pulled the whole thing up and left the underside pale where it stood off the heat.
Where it goes wrong The blade was pushed rather than drawn, through a surface left warm and slack, so it went past the fat and into the flesh. The cuts bleed as they cook and the juices flood the surface, so it steams instead of crisping: the lines gape into wet ragged trenches, the flesh between them dries into hard ridges, and the skin stays leathery and pale where it should have blistered and set.

- The surface is read rather than assumed: bubbles break slowly in one or two places, or the surface merely shivers, and it does not reach a rolling boil at any point.
- It was held there: the pot was watched and the heat adjusted rather than set once and left, and there is no tide mark up the pot wall from a boil-over.
- The liquid stayed as clear as it should be: no clouding from agitation, and no fat churned into an emulsion through it.
- Whatever is in the liquid is still intact: nothing shredded, broken up, or worried apart by movement.
- The level is roughly where the elapsed time should have left it; a large drop is the evidence that it ran hotter than this while nobody was looking.
Where it goes wrong It was brought to a boil and then left on the same heat, so it churned for the whole cook: the liquid clouded, the fat emulsified into it, and the solids broke apart into the broth.
